Whole roast tenderloin with pumpkin and apple-walnut salad

What we send:

Preheat the oven to 200 ° C. The ingredients may get wet from the steam, the meats may release juice, if you experience this, wipe them dry with a paper towel. Cut the pumpkin approx. for 1 cm thick slices. Quarter the lemon. Cut the onion into thin circles, the apple into smaller cubes, sprinkle with a little lemon juice to keep it from browning. Coarsely chop the nuts. Finely chop the mint leaves.
Put the circled pumpkins on a baking sheet, sprinkle with a little olive oil, salt, pepper and put sumach on it. Bake for about 20-22 minutes, or until it turns slightly brown and you can easily prick it with the fork.
While the pumpkins are baking, mix the onion, sugar, one-quarter lemon juice, salt and a little water in a larger pan. With frequent stirring, cook over medium heat for 2-3 minutes, or until the onion is soft and the liquid around it begins to shrink. When it’s done, put it on a plate and cover.

Salt and pepper the tenderloin. Wipe the pan used for the onion, heat up a little olive oil when warm, put the tenderloin in it and fry each side for 3-4 minutes. When done, transfer to a plate and cover with aluminum foil and allow to rest for a minimum of 5-6 minutes.
- Raw: calm and open palm (core temperature: 40-42 ° C)
- Rare: touching the tip of the thumb and forefinger (core temperature 45-50 ° C)
- Medium rare: touching the tip of the thumb and middle finger (core temperature 54-56 ° C)
- Medium: touching the tip of the thumb and ring finger (core temperature 58-60 ° C)
- Well done: touching the tip of the thumb and little finger (core temperature 64-66 ° C)
While the tenderloin rests, mix the feta cheese, walnuts, apples, remaining lemon, set aside red onions, and mint in a medium-sized mixing bowl. Mix well, pour a little olive oil on it and salt and pepper to taste.
Slice the steak on a cutting board. Place the steak and spicy salad next to the pumpkin, garnish with lemongrass. (You can also offer the salad separately on a small salad plate.)
