1. Ingredients

The ingredients may get wet from the steam, the meats may release juice, if you experience this, wipe them dry with a paper towel.

Cut the spring onion into strips lengthwise. Seed out the jalapeño peppers, cut into rings. Cut the ginger into matchsticks and the garlic into rings.

2. Ginger & spring onion

Heat some olive oil in a thick-walled pan and fry the ginger, garlic and jalapeño peppers. If the ginger is already golden brown, add the spring onion and soy sauce. Simmer for a few minutes, then cover and set aside.

3. Cashew & broccoli

Fry the cashews in some olive oil, take it out of the pan. If necessary, add more olive oil to the pan and fry the broccoli until bright green. Pour a little water on it, then simmer under a lid for a few minutes. When it starts to soften, add the broccoli to the half of the pan with the wooden spoon and pour the oyster sauce over the other half. When the sauce starts to boil, mix it with the broccoli and add the cashews as well.

4. Sea bass

Take another pan and heat up a little olive oil. Salt the perch and pepper to taste. Bake both sides of the fish over medium heat for approx. 3-3 minutes.

5. Serving

Put a pile of ginger onions on the perch, drizzle on top of the soy sauce and serve with the cashew broccoli.
