1. Ingredients

Preheat the oven to 220 ° C.

The ingredients may get wet from the steam, the meats may release juice, if you experience this, wipe them dry with a paper towel. Season the pork medallions in a bowl with the Chefbag # 2 spice mix. Rotate well so that the spice touches the meat evenly everywhere. Slice the apple and shallot and red onion. Tear off the leaves of thyme and parsley. Grate the peel of one half of the lemon, cut 2 cloves from the other half.

2. Sweet potatoes

Put the baking paper in the baking tray. Put the sweet potatoes on it, salt, pepper and sprinkle with olive oil. Bake for approx. 25 minutes.

3. Medallions

Heat a little olive oil in a larger, thick-walled pan. If it is warm enough, put the pork medallions in it, salt, pepper, and fry each side for 3-4 minutes, or until it translates to what you want. When done, take it out on a plate and keep it warm.

4. Apple

Using a household towel, wipe the pan slightly baked with the pork medallions. Then melt the butter in it, put the sliced apples, the shallots. Salt and pepper. Bake for approx. 4 minutes until the apples begin to brown slightly. Then pour in the apple cider and cook for another 2 minutes, making sure the apples stay a little crispy. Sprinkle with thyme.

5. Sweet potatoe salat

In a mixing bowl, mix the fried sweet potatoes, red onion, parsley, pour in the remaining olive oil, and squeeze two articles of lemon juice into it. Salt and pepper to taste.

6. Serving

Serve with apple pork medallions garnished with warm sweet potato salad.
